From the turkey, to stuffing to cranberry sauce – the holidays are packed with delicious foods and feasts. This Spicy Coconut Cream Soup recipe from Metabolic Balance serves 2, so you can adjust the proportions as needed. 

Ingredients: 

+ 1-2 stalks lemongrass

+ A little fresh ginger

+ 1-2 twigs fresh cilantro 

+ 1-2 chili peppers

+ 4 fresh button mushrooms

+ ½ liter chicken broth (17 fl. oz)

+ ¼ liter coconut milk (8.5 fl. oz)

+ 1-2 teaspoons curry powder

Instructions: 

1. Clean lemongrass and cilantro (set some cilantro aside for decoration). 

2. Peel and finely chop ginger, roughly chop cilantro. 

3. Add to chicken broth and bring to a boil. 

4. Let simmer until only half the broth remains. 

5. In the meantime, wash and cut a notch in the chili peppers (immediately wash your hands thoroughly or wear gloves). 

6. Clean and cut mushrooms in thin slices. 

7. Add to broth: coconut milk, chili peppers, and let simmer briefly. 

8. Remove the chili peppers. 

9. Use an immersion blender to mix soup to get a frothy smooth consistency. 

10. Add a few slices of mushrooms in the soup and decorate with fresh cilantro.
